Picture this: It is one in the morning. You are downtown and starving, craving something besides pizza. Fear no more, because Pelican Brothers Food Truck owners Mike Riska and Matt Holmes are here to help.
Parked conveniently outside of Double Down Live on Southwest Second Avenue, the truck is hard to miss. One of the first of its kind, and with music blaring, this food truck specializes in cheap and creative items. And with an ever-changing menu, you can always count on new options to excite your tastebuds.

GOURMET ON A BUDGET
We were mind-blown that nothing on the menu cost more than $5—not even the Chicken and Waffle Slider coated with local honey gravy. A nice portion of fried chicken sandwiched between two Belgian waffles is just too good to be true. And the gravy is not the only thing that is purchased locally. Chef Mike gets all of his groceries right here in our city.
The Barbeque Pork Grilled Cheese Sandwich with smoked Gouda and Cheddar ($5) proved to be another bang for our buck.
SAUCES AND SURPRISES
With more than 15 years in the business, Chef Mike knows how to get your mouth watering. His recipes are 100 percent original and imaginative. He also cooks at lightning speed, so even when there is a line, you know you will not have to wait more than five minutes to bite in to one of his specialties. It would not be late-night food without fries, but Pelican Bros. puts their own creative spin on this late-night classic.
Not only can you get Vegan Chili Cheese Fries ($5), but the sauce bar is just another reason why we love this food truck so much. When the fries came out steaming hot, we were able to choose from Curried Ketchup, Spicy Aioli or Chipotle Sour Cream. Did we mention that all of these sauces are homemade?
SWEET ENDINGS
If you are looking for the ultimate sweet-tooth cure, the Peanut Butter, Chocolate and Banana Empanada ($4) will be calling your name. This delectable dessert is the best-kept secret in Gainesville, filled with rich and creamy chocolate that will keep us coming back for more.
